A BP3 Favorite Goes Brick & Mortar

Peached Tortilla has been a BP3 favorite ever since we first discovered it as a food truck at the Austin Kite Festival.  Since then we’ve been chasing it down periodically for fantastic lunches near the Domain or Plaza 5000 near the lake.

So, you can imagine how happy we are for the Peached Tortilla folks that they are opening their first retail outlet without wheels near our offices!

The concept will focus on serving urban Asian and Southern comfort food with a modern twist. The restaurant will expand on the flavors from the existing food truck and catering company, serving some of their greatest hits in addition to new items such as unique rice bowls and savory noodle dishes. While the restaurant is under construction, the company will continue to use their pop-up dinners as a test kitchen to solicit feedback from diners. The next installment of the popular series is set for late February 2014.

“We want to provide an affordable and accessible neighborhood dining experience without sacrificing the sophistication of our food,” said Silverstein, owner and founder of The Peached Tortilla. “In trying to merge urban Asian and Southern flavors, we are going to play around quite a bit and try to push the boundaries.”

I expect that BP3 team mates will be among the regulars at Peached Tortilla – especially if the banh-mi tacos continue forward on the menu!

Taking a step back, Peached Tortilla follows a pattern of other successful food trailers in Austin, such as Torchy’s Tacos, and Odd Duck, and East Side Kings.  Starting with a trailer to experiment and be bold with food, when you find the winning combination, take time to scout out the right first location.  It is the “lean” version of opening a restaurant – get product-market fit before investing in scale.  Then get scale in one location before you open a second.
